Butchery Production Manager
We are a leading meat processor (Beef, Lamb, Mutton, Poultry, Marine and Processed Value-Added Meats). Our primary clientele include hotels, restaurants, catering institutions, retail outlets, and supermarkets, within Eastern Africa. We are looking for an experienced Butchery Production Manager to join the team at our plant in Nairobi, Kenya.
Reporting to the Operations Manager, and working closely with the Sales and Quality Assurance teams, the Butchery Production Manager will be responsible for all activity pertaining to the de-boning, trimming, packing and storage of meat and meat products, including processed meats and value-added items (e.g. sausages, burgers, hot dogs, salami, and sandwich meat, among others).
The successful candidate will be responsible for running an effective operation whilst delivering on high company and customer expectations. You will be accountable for all aspects of the departmental processing operation including yield, quality and cost achievement, as well as controlling stock levels of finished products and packing material. This must be achieved in line with the business’ policies and procedures, whilst developing the team and quality culture on site.
The post holder will maintain food production compliance in accordance with the relevant legislative, customer and company requirements, paying particular attention to Food Safety standards held by the plant (HACCP, ISO 22000:2005 and FSSC 22000:2010). You will also manage effective and timely monitoring of all performance data to ensure that improvements, where identified, are realised.
The above job description is a broad overview and not definitive. Whilst it is accepted that the role will mainly focus on the production floor, and associated areas, you may occasionally be required to oversee other departments, as determined by the business. Application Requirements:
• Degree holder;
• Minimum of 5 years hands-on experience in a similar role in a meat processing environment and strong knife skills;
• Excellent knowledge of legislative requirements – food safety, health and safety and employment legislation;
• Excellent communication skills – facilitating effective communication with other members of the site management team to ensure compliance with, and development of, the site quality manual / systems / HACCP / ISO / FSSC.
• A strong manager, and motivator, of people – be able to counsel, discipline and train.
